Thursday
No point in going to work this late with the commute and all, so I am doing some cleaning and stuff and off to the market - having dinner at a friend's house tonight and I am to bring dessert. Any fabulous suggestions that take little time (my current idea is just the go-to of berries and very good vanilla ice cream).
While you foodies are at it, how about a nice easy, low-prep snack for my women's group tomorrow night? I can bring most anything, as long as it is vegetarian (or even vegan!). Last time we had plenty of fresh fruit, some people brought salsa, hummus, pita chips, tortilla chips. I was chosen to bring beverage so I brought sparkling water and a bottle of wine. However I wouldn't mind bringing something a bit more... festive. Currently the way I am feeling I would give up and snag a bag of Doritos from the gas station on the way there so any advice would be greatly appreciated! :)

post a commentYou could purchase some of those ready made Angel Food Cake singles/minis, buy berries, and some low-fat whipped cream or strawberry glaze. Mmmmm. Easy, delicious...and fairly low cal.
7-layer dip is always a hit!! Layer refried beans, gucamole, salsa, sour cream, green onions, olives, shredded cheese in a casarole dish and voila! Most recipies call for you to mix a package of taco seasoning mix into the refriend beans. You could also do variation with chopped bell peppers, lettuce, etc. Don't forget the bag of tortilla chips and you're set!!
For dessert, your idea of ice cream and berries is perfect for summer.
As for an easy snack: My “go-to” is the antipasto platter. You could make it vegetarian or vegan by eliminating the meat and cheese and using only marinate artichoke hearts, an assortment of olives, marinated mushrooms, some grape tomatoes (also marinated?). Maybe a nice loaf of bread and on the side with an olive oil/balsamic blend for dipping? The beautiful thing about this plate is that it mostly comes out of jars and containers, so it’s easy as heck! I made a great vegan dip the other night and almost all of it is zero prep. In a food processor combine one can drained rinsed white beans, three bottled roasted red peppers (rinsed and sliced), one clove garlic, juice of one lemon, 2-3 tbsp olive oil, salt, pepper and chili flakes to taste. Process until smooth; serve with pita or crackers.

How about this? Buy a packet of Knorr's brand Vegetable Dip Mix and a package of frozen chopped spinach and a container of sour cream (regular or fat free, whichever). Defrost the spinach and drain, mix with the dip mix and sour cream. I believe the recipe is also on the box of the Knorr's. Its delicious with any kind of chips or crackers.

I usually love making dessert, so I really wanted to do something when we had people over for the 4th, but I still don't have my energy back, so I made one of those simple little pudding pie. I got a pre-made pie crust, cheesecake flavored pudding, and strawberries and blueberries to top it. It took like 2 seconds to make and about 2 hours to set in the fridge.
As for the snack...since there seems to be plenty of fruits, veggies, and grains, how about bringing some fancy cheese and crackers? :D We need our calcium you know. ;)

Toss some cherry tomatoes in a little salt, garlic powder, and fresh parsley: So tasty! And so easy! Just pop it all in a bag and shake 'er up :)
To take your berries and ice cream to the next level consider doing this: add a tsp of butter to a non stick pan and then a handful of pecans. Let the pecans roast a bit and then add a tbsp of sugar. Let the sugar caramelize and finally add two tbsp of balsamic vinegar and a pinch of black pepper. Top your berries and ice cream with this mixture -- really, really good.

Caprese to go - mozarella chunks, halved cherry tomatoes, fresh basil. toss the cherry tomatoes in balsamic vinegar, olive oil and salt and pepper. Easiest done on cocktail sticks, one mozarella, one tomato, 2 pieces of basil.
For the dessert, mix the frozen fruit with some meringue pieces, serve with cream or ice cream. Never done it with frozen fruit, but think you can do something with melted white or dark chocolate poured over them.... oh hungry now.
How about cream cheese spread thin on a plate with a sweet salsa poured on top. I just got a jar of peach pineapple (I think) salsa and it was yummy. We ate it with scoops tostitos.
Try a variation of a pavlova for an easy dessert: buy a large or several small meringue nests, add some whipped heavy cream, top with berries. To make it even easier, you can use good vanilla ice-cream on top instead of whipping the cream yourself. An alternative with same ingredients is a British dessert caleld Eton mess: whip the heavy cream until it holds its shape, mix in roughly bashed bits of meringue and raspberries. It was traditionally at speech/parents' days at Eton School in Windsor, so you have a ready-made story to accompany it as well.

These ideas aren't vegan but here goes -
You could get a block of cream cheese and some jalapeño jelly (or any kind of hot pepper jelly). Pour the jelly over the cream cheese and serve with bread and crackers.
Here's one of my mom's favorites ( again- not vegan)
a warm wheel of brie with apricot preserves served with it. It's a hit!
How about warm brie served with apricot preserves or with sun dried tomatoes along with french bread and crackers?
